Healing Beef Stew

My favorite recipe for all things cozy. The smokey flavor of the bacon is absolutely necessary. Sometimes I add rice to add more comfort to this already cozy bowl stew. I absolutely love this recipe and make it for all the women I support daily.

COOK TIME: 7.5 Hours
TOTAL TIME: 8 Hours
SERVINGS: 5

INGREDIENTS

  • 2 lbs organic beef stew meat 
  • 2 cups organic beef broth 
  • 6 slices organic bacon, finely chopped
  • 4 large carrots, chopped
  • 1 onion, finely chopped
  • 4 celery stalks, chopped
  • 4 baby potatoes, chopped
  • ¼ c tomato paste
  • 2 tbsp Herbes de Provence 
  • 3 tbsp olive oil
  • 5 cloves garlic, minced
  • 1 tsp sea salt
  • black pepper to taste

DIRECTIONS

In a stock pot with olive oil, add onions and garlic. Add in carrots and celery and cook until lightly soften. Pour bone broth on top of veggies. Mix in tomato paste, herbs and salt. Then turn down the heat to low/simmer. Mix in stew meat and bacon. After 15 minutes, add in potatoes. Cook on low/simmer for 60 minutes and turn off when potatoes are done. I prefer to let it simmer on the stove for a total of 7.5 hours or use the crockpot on low for the entire time.
