Cottage Apricot Breakfast Soup

This dreamy soup is perfect for when our nervous system’s need a little hug. The ideal reset to allowing your body to rest while receiving nourishment and hydration. I love a good healing savory soup like this one in the morning to keep my blood sugar stabilized during the whole day.

TOTAL TIME: 1-Hour
SERVINGS: 4-6

INGREDIENTS

  • 2 tbsp ghee
  • 1 large onion, chopped
  • 2 garlic cloves, chopped
  • 1/4 ginger knob, peeled and chopped
  • 5 large carrots, chopped
  • 1 medium sweet potato, chopped
  • 1 cup dried apricots or 2 cups fresh apricots
  • 4 cups of chicken bone broth
  • 2 tbsp sunflower and pumpkin seeds
  • 6 tbsp organic plain yogurt

DIRECTIONS

In a large saucepan on medium heat, place ghee or butter with onion and garlic. Mix in ginger and cover for 10 minutes until softened. Stir in carrots, sweet potato, apricots and bone broth. Season to taste. Bring up to a boil then reduce to a simmer and cook, partially covered, for 25 minutes. Gently toast seeds in a frying pan and allow to cool. Allow soup to cool and then blend until smooth. Serve warm with a swirl of seeds and yogurt.
