Cherry Lover Bars

These cherry bars are divine! I love how they are naturally sweet from the cherries and full of flavor. The nutty crust adds a cozy texture to make these dessert bars also snack worthy. Feel free to sub for half raspberries instead of cranberries!

INGREDIENTS FOR ALMOND CRUST

  • 1 1/2 cups of almond meal 
  • 1/4 cup coconut flour 
  • 2 tbsp ground flax seed
  • 1 tsp baking powder
  • Sea salt
  • 1/2 cup almond butter
  • 6 tbsp maple syrup
  • 1/2 tsp almond extract

INGREDIENTS FOR CHERRY & CRANBERRY JAM

  • 3 cups frozen pitted cherries, roughly chopped
  • 1/2 can of cranberries 
  • 2 tbsp maple syrup
  • 2 tbsp chia seeds
  • 1/2 tsp almond extract

DIRECTIONS

Preheat the oven to 350°F. 

Crust: Make almond bar dough and press into a square glass pan parchment paper lined. Reserve 1/4 of the dough for a crumble. Bake for 8 minutes then remove from the oven. 

Jam: Make jam by bringing to a boil then simmering cherries and cranberries for 15 minutes. Add in chia seeds and simmer for another 5 minutes until sticky and gel like. Turn off heat and add almond extract. Spread jam onto almond crust in the baking pan.

Crumble extra almond bar dough on top and bake for 12-15 mins. Wait for bars to cool to cut them.

Tasty Tip: They freeze well too!
